Second, we've eaten at Locust twice and really enjoyed it both times--but note that the first time (march 2021) was significantly cheaper than the second (October 2022). We would agree with you that the menu isn't really tied to Nashville. Nonetheless, we will go back. We enjoyed each course on the second visit--like you, we ordered everything. (First visit, the menu was still embryonic....) Full disclosure, our experiences are undoubtedly colored by the fact that we've loved dining with Trevor since New year's Eve 2013, at Catbird . But, best in the USA is a mighty big pair of shoes....
Finally, to follow up on your earlier Chiloe posts--we really enjoyed Curanto (not cooked in traditional manner). Unfortunately, despite a 72 day trip, last-minute ferry issues limited us to 2 nights on the islands. The architecture and wildlife were breath-taking though--even though it was MUCH busier and more populated than the areas further south.
I thought the food at Locust was pretty good. I think my problem is that I'm an increasingly cranky old man who likes to complain about things more than he should.
I'm really glad to hear you enjoyed Chiloe and the curanto. Chiloe is one of those places I can't stop thinking about, it's so beautiful and so different from anywhere else I'd ever been.
